• The coconut palm grows in 90 countries around the world. Our sugar is harvested by organic farmers in Indonesia, who responsibly farm palms and collect their nectar without harming the environment.
  • The harvesting of coconut sugar (also called sap or toddy) does not affect the palm’s ability to bear coconuts in the future, adding to the tree’s value as a sustainable source of income for a lifespan of 60-80 years.
  • The harvested nectar is evaporated at a low temperature, then grated to a fine mesh (our preferred sugar grain size for baking, especially persnickety things like macarons, meringue or pastries).
  • After a long journey across the sea, we triple check the purity and quality of our sugar, then package it up for its final destination: Kitchens where delicious things are made!
